Roasted Chayote

This is one of the easiest recipes you will find on our site. Chayote (pronounced chay-oh-tay) is a tropical squash that originated in Mexico. We think it tastes best roasted and do remove the seed, even though it is entirely edible.  You can make the same recipe quicker by frying. Enjoy this sweet, spicy and juicy vegetable dish with any latin meal and some Ole' Sangria.

Ingredients:

3 Chayotes sliced thin

2 teaspoons sugar

1/4 teaspoon cayenne

2 tablespoons olive oil

1 1/2 teaspoons salt

1 teaspoon paprika

1.  Combine all ingredients and roast on a cookie sheet or baking pan at 400º for approximately 40 minutes   until golden at edges. If desired place under a broiler for a minute or two for extra browning.
