SERIOUSLY ADDICTING SWEET AND SPICY PRETZELS
Seriously these seem to be a snack you love or could do without. If you are a lover - watch out these are addicting. I would bring these into work at holiday times. One warm and busy day at the office, my friend Sondra came over to me and begged me to make these for her, saying she could not wait for the holidays. She even offered to pay me. I brought them in the next day.
Ingredients:
6 tablespoons butter (reserve 1 tablespoon)
1/2 cup sugar
1/2 cup brown sugar
2 tablespoons light corn syrup
1/2 teaspoon baking soda
16 ounces pretzels
1-2 teaspoons cayenne pepper (depending on heat desired)
salt to taste
Preheat oven to 200º
----------------------------------------------------------------------------------------------------------------------------------------------------------
1. Stir the butter, sugar, brown sugar and corn syrup in a medium sized over a medium heat just until the sugars are dissolved. Gradually bring the mixture to a boil and then lower hear to a simmer for an additional 4 minutes.
2. Remove from heat and add baking soda, being careful as it might bubble and boil.
3. Coat the pretzels thoroughly with the caramel mixture, reserved tablespoon of butter and cayenne pepper. Spread them onto a parchment lined cookie sheet and bake at 200º for 45 minutes.
4. Remove from oven and transfer pretzels to a buttered sheet of parchment paper. When cool enough to handle separate the pretzels, taste and adjust seasonings. Cool completely, store in an airtight container.
