PUMPERNICKEL BREAD FOR THE BREAD MACHINE

 

My husband Bob says, "This bread machine is the greatest thing since sliced bread", whichever you choose clever or corny there is truth to it.  Usually all you do is dump ingredients in and let the machine do all the work .  Here I tamper with the machine just a bit and add vinegar just at the start of the 2nd kneading process. This allows the dough to get a good head start rising because vinegar can limit this process. There is nothing quite like the aroma of fresh bread baking.  This pumpernickel is tasty and hearty.

 

 

 

Ingredients:

1 1/8 warm water

1/3 cup molasses

1 1/2 tablespoons oil

1 1/2 cup white flour

1 cup rye flour

1 cup whole wheat flour

3 tablespoons cocoa powder

1 1/2 teaspoons caraway seeds (optional)

2 teaspoons dry active yeast

 

2 teaspoons vinegar

1.  Place all ingredients - EXCEPT the vinegar - in the order listed into a bread machine bowl, use “basic          bread” and a “light” setting.

2.  When the machine punches dough down at first rising and begins a second kneading- do not turn the          machine off, just add the vinegar and let the machine finish it's job.
