IRISH SODA BREAD

 

After many trials of Irish Soda Bread, this is our best. One St. Patty's day I made three different versions and asked my friends to rate them, this was the winner hands down. It is actually adapted from a recipe given to me by my cousin Fran. It is a bit untraditional for the fact that it is coated with melted butter and moist. There are never any leftovers on the day it is made.

 

Ingredients:

 

3 cups flour

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup sugar

1 cup raisins

1 1/2 teaspoons caraway seeds (optional)

1 1/2 cups buttermilk

2 eggs lightly beaten

5 tablespoons melted butter (reserve 2 tablespoons)

                                                   

                                                                                                              Preheat oven to 350º

1.  Sift flour, baking powder, baking soda, salt and sugar into a large mixing bowl. Sprinkle with raisins and caraway seeds. Set aside.

2.  Stir buttermilk and eggs together, add to dry ingredients until just combined.

3.  Lightly fold in 3 Tbs. of melted butter.

4.  Shape into a roundish loaf (dough should be moist) and place in a greased 9” round cake pan.

5.  Bake for approximately 45 minutes at 350º. Remove from oven and coat with melted butter.
