       Grilled Summertime Pizza

 

 

 

 

 

 

 

 

 

Fire up the grill and get ready to savor every bite of this multi-layered, multi-flavored pizza.  Marinated chicken breast, Muslin greens, nuts, cranberries, and a "secret" goat cheese dressing all atop crunchy grilled fired pizza dough. We call the dressing "secret" because a Culinary Alumni friend of the family offered to pay my sister Pauline for it. Pauline was honored and graciously gave the recipe. It is the dressing that ties this whole pie together.  For optimal flavor- let the finished pie rest (if you can) for at least 5 minutes.  

 

 

Ingredients:

 

2 traditional pizza doughs (see recipe) or store bought.

Olive oil for brushing

sugar (just enough for a light sprinkling)

adobo seasoning (just enough for a light sprinkling)

2 cloves minced garlic

On a floured surface, roll out each dough into thin round or rectangular shapes. Brush both sides generously with olive oil, place on hot grill and cook for approximately 4-6 minutes until the dough is firm.  Flip the dough and brush with more olive oil and sprinkle with sugar,adobo and minced garlic.  Sprinkle with sesame seeds along the rim of the crust. Cook for 3-4 minutes more

 

Grilled Chicken

6 chicken cutlets 

1 cup of soy-sauce 

1/2 cup oil

2 Tablespoon sugar

4 clove of garlic chopped fine

Place in plastic baggy (mix around) to marinate for about 1/2 hour or more

Grill on outside grill

 

Salad

muslin greens-preferably pre-washed or rinsed and dried very well.

sliced almond

glased pecans

cranberry 

dried cherries

blueberry

fresh cut up strawberry 

fresh cut up pair 

Goat cheese

feta cheese

shredded sharp cheddar cheese

 

 

Dressing

 

 

3/4 cup of honey

3/4 cup of vegetable oil 

1/4 cup of apple vinegar 

4 once block of goat cheese

one cap full of Worcestershire sauce

mix well (specially honey on bottom)  I mix in glass jar with lid.
