         GINGER SYRUP

Ginger takes many dishes to new heights. Take a look at our recipe for Pineapple Ginger Mint Salad. This ginger syrup is wonderful to have on hand and is a great addition to lemonade, iced tea and mixed drinks. We usually freeze fresh ginger and it lasts for months.  The cooked ginger root in this recipe may also be frozen.

Ingredients:

2 cups water

1 cup sugar

1/2 cup sliced fresh ginger root with the skin  (frozen ginger may be substituted)

-----------------------------------------------------------------------------------------------------

1.  Heat water and sugar over a medium heat stirring until the sugar is dissolved.

2.  Add the fresh ginger root and simmer for 45 minutes, let cool.

3.  Strain to remove the ginger and refrigerate for up to two weeks.
