CAST IRON SKILLET DEEP DISH PIZZA

Layers and layers of meat, cheese, tomatoes and veggies. So many variations for you to be creative. Have fun while arranging each layer, remember this is pretty fail proof because you are using ingredients of your choice. There is no need to add extra salt because salt is imparted by most of the meats and cheeses. The crust is a cross between biscuit and pizza dough. This is one hearty pizza.

Ingredients:

Pizza dough:

1 1/4 cups warm water

1 teaspoon sugar

1/4 cup of vegetable oil

1 1/4 cups flour

1 3/4 cups self rising flour

1/4 cup semolina

2 heaping teaspoons of dried yeast

2 cups of tomato sauce

1 lb of ground sirloin, browned and crumbled

1 lb sausage, fried and crumbled

1 package of thin pre-sliced pepperoni

1/2 lb sliced ham

two onions (sliced very thin or caramelized)

1 large red pepper, sliced thin

4 ounces mushrooms (fresh or sauteéd)

1 small jar of marinated artichokes (drained)

1/2 cup pitted olive slices

minced parsley about 3 tablespoons

grated Romano cheese

3 cups of shredded mozzarella, and/or provolone, and/or cheddar

-----------------------------------------------------------------------------------------------------

1.  Place all ingredients in order into a bread machine and set on dough position, once it is kneaded                unplug the unit  and wait until the dough rises double in size. (Or knead by hand and place in a greased      bowl, cover and let rise until double in size.)

2.  Punch down lightly and let rise for 1/2 hour more. Handling gently, line a well greased cast iron skillet      with the dough and let rest for 10 minutes more.

3. Then layer with your choice of ingredients listed above, starting with the cheeses, meats, vegetables         and tomato sauce. Repeat the pattern ending with the tomato sauce on top.

4.  Bake at 425º for 15 - 20 minutes.
