CARROT AND POTATO WHIP

 

Ridiculously easy but so versatile and smooth and just plain tasty. My mother tried to duplicate a similar dish she had at a restaurant many years ago, never had the restaurant’s, but I sure love mom’s version.

 

Ingredients:

 

6 carrots diced 

5 potatoes diced

1/2 small onion diced

1 cup chicken broth

1 bay leaf

sprig of fresh thyme

1/4  teaspoon sugar

4 tablespoons butter or margarine

salt and pepper

1.  Place first 7 ingredients in a sauce pan and bring to a boil, turn down to a medium heat and                  cover,stirring occasionally, until the carrots are soft( fork tender ).

2.  Uncover and simmer over a low heat until broth is almost gone or drain the broth if you are limited       for time.  Remove bay leaf and thyme.

3 .  Add the butter and mash by hand or use a food processor.

4.  Season with salt and pepper and adjust seasoning if necessary.

 

Note:  Spice this up with Cayenne or hot sauce or even a pinch of nutmeg, if desired.
