Grilled Peach Chutney

 

Even though Summertime peaches give the best flavor, this chutney is good any time of the year.  This is a great accompaniment to cheeses, fish, grilled meats, fish, and sandwiches.

 

Ingredients:

5 ripe peaches (cut in half pit removed)

1 small sweet onion (cut in half)

2 tablespoons white balsamic vinegar

2 tablespoons brown sugar

1 tablespoon honey

a pinch of crushed red pepper flakes

1/2 teaspoon kosher salt

juice of one lime

1/2 teaspoon lime zest

1 tablespoon chopped fresh mint or cilantro

1.  On a hot grill or grill pan heat the peaches and onions until tender, approximately 8-10 minutes                   (onions might take a bit longer), turning occasionally.  Remove from heat.  

2.  In a small saucepan bring the vinegar, brown sugar, honey and red pepper flakes  to a boil, stirring              occasionally. Dice the onions and add to the saucepan. Boil for one minute more, remove pan from              heat.

3.  Peel the peaches and chop, add to saucepan with remaining ingredients.  

       Serve hot or cold.
